On July 25, 2017, Join us for our first ever Sake Tasting + Food Pairing event! Chef Matt Rojas will be preparing a special 5-course dinner of dishes designed specifically to pair with our Sake menu. Also on hand will be Sake Specialist Ryan Mellinger from Joto Sake, who will be your guide and captain on this Sake adventure. About Chef Matt Rojas

Chef and “Char Sue” restaurant co-owner Matt Rojas is a veteran of 11 Madison, Degustation, Nobuo at Teeter House and was formerly the Executive Chef of Rouge et Blanc.  Matty grew up in Arizona, where he first learned to cook from his mother and grandmother.  He later trained under Nobuo Fukuda, Daniel Humm, Wesley Genovart and Susur Lee.  

About Ryan Mellinger

Ryan Mellinger is a Sake Specialist and Sales Manager for Joto Sake. Based in NY, Ryan is proud to share Joto Sake with her hometown, but also travels extensively throughout the Northeast and North Central U.S. educating and working with talented restauranteurs, chefs and sommeliers. Joto is the lead importer of artisanal Japanese sake in the U.S.  Joto is Japanese for “highest level” and describes their multi-generational, family-owned sake breweries. Hailing from a range of regions in Japan, Joto Sakes each have rich histories that make them both versatile pairings at your next dinner, and also great conversation.  

 

About Char Sue

Char Sue is a casual Asian restaurant in the heart of the Lower East Side, located at 119 Essex Street, between Delancey Street and Rivington Street. The name “Char Sue” is derived from cha siu, the Cantonese technique for roasting meats skewered on a fork over a fire.   The menu is heavily influenced by the familiar flavors of Vietnamese, Thai, Chinese and Japanese cuisine, but Chef Rojas has translated his passion for Asian ingredients into uniquely re-imagined dishes. Menu items include tender Japanese curry lamb necks, five spice duck wings, char siu pork ribs and black pepper beef tacos made with crunchy egg roll shells and signature roasted duck rubbed with Sichuan spices. Some of the meats are hung and displayed as a homage to Cantonese cuisine.
